Age 44, passed away on June 16 in her home surrounded by family. She was the wife of Tom Simon. They shared 21 wonderful years of marriage together.
Born in Howard Wisconsin, she was the daughter of Gary and Gia Long. She graduated from St. Cloud State University with an English degree and went on to work as a technical writer, a career she excelled in and loved.
Amber gained the greatest joy spending time with her family and friends. She dedicated her own life to improving the lives of others, especially those of her husband and children. Amber was always quick with a compliment and loved making others feel good about themselves. She was the smartest, warmest, kindest and most loving wife, mother, daughter and sister. Her resiliency in the face of adversities was admirable and inspirational. During her 2-year fight against cancer she endured many hardships but did so with dignity and without complaint, still managing to selflessly support others. She fought relentlessly, even to her last breath.
Her family remembers her as someone who loved reading about new technology, writing, and listening to Harry Potter audiobooks. Amber was a passionate consumer of coffee, to the point where multiple Caribou Coffee shops throughout the metro area could identify her voice immediately at the drive-thru. She even received a Christmas gift from the corporate office for her dedicated patronage. She could be found on weekend mornings golfing in New Prague with her husband Tom. While her skills were rapidly improving, she still had an innate ability to 3-putt from a foot away.
She is survived by her husband Tom, children Cole and Kennedi, parents Gary and Gia, brothers James, Brandon, Kyle and Garrett, along with many nephews and one niece.
A visitation will be held on Friday, June 21, 2024 from 3-6PM at Evans-Nordby Funeral Home, 34 2nd Street NE, Osseo. Private family interment to take place at a later date.
